What I Made for Dinner

Tonight's dinner is brought to you by the grill.  I didn't get any pictures of the finished food (it went too fast!), but I do have some good recipes for y'all.


The Ultimate Chicken Burger
Ingredients
  • 4 large chicken breast fillets, skinned
  • 1 large egg white
  • 1 tbsp cornstarch
  • 1 tbsp all-purpose flour
  • 1 egg, beaten
  • 1 cup fresh white breadcrumbs
To Serve (options)
  • 2 beefsteak tomatoes, sliced
  • hamburger buns
  • shredded lettuce
  • mayonnaise
  • ranch dressing
  • pickles
  • onion
Cooking
  1. Place the chicken breast between 2 sheets of nonstick parchment paper and flatten slightly using a meat mallet or a rolling pin.  Beat the egg white and cornstarch together, then brush over the chicken.  Cover and let chill for 30 minutes, then coat in the flour. 
  2. Place the egg and breadcrumbs in 2 separate bowls and coat the burgers first in the egg, allowing any excess to drip back into the bowl, then in the breadcrumbs.
  3. Preheat the grill.  When hot, add the burgers and cook for 6-8 minutes on each side, or until thoroughly cooked.  If you are in doubt, it is worth cutting one of the burgers in half.  If there is any sign of pinkness, cook for a little longer.  If using beefsteak tomatoes, add the tomato slices for the last 1-2 minutes of the cooking time to heat through.  Also optional, brush the buns with butter and toast on the grill.  Serve with desired toppings.

Grilled Corn-on-the-Cob
Ingredients
  • Corn on the Cob
  • Butter
  • Salt and Pepper 
  • Any other desired seasonings
  • Foil
Cooking
You can grill corn in the husk or in foil. I've done both, and they both work and are yummy.  Tonight I did them in foil, so I'm going to give you the directions for that.  
  1. Removed husk and all strands of silk from corn cob.  
  2. Soak corn in cold water for 15 minutes.  This helps it stay moist when cooking.  
  3. Cover with butter and desired seasonings.  I used McCormick Grill Mates Roasted Garlic and Herb seasoning tonight.   You can add salt and pepper here, or wait and let each person do it to his or her own taste.  
  4. Wrap in foil and grill for 15-20 minutes, turning frequently to prevent any one side from burning.  

Grilled Asparagus
This was a first for me! I've never cooked it, let alone grilled it, but it was so easy and good. 

Ingredients
  • 1 lb Asparagus
  • 1 1/2 tbsp olive oil
  • Salt and Pepper
Cooking
  1. I put all of the ingredients in a big plasticware container and shook it to make sure the asparagus was evenly coated.  Then I let it sit for about 15 minutes to soak up some of the moisture.
  2. To grill, I used my handy grilling pan (pictured below).  If you don't have one, it's a great investment for those who like to grill.  You can get one for $10-$15 at World Market. 
  3. Grill over medium heat for around 10 minutes, turning frequently.  It's done when your asparagus is soft and droopy. 
One of my favorite cooking investments.  This thing
comes in handy over and over for grilling.  

So, including all of this, we also had broccoli, salad, and potato rolls (homemade by my friend Emily.  Thanks Emily!).  It was a feast!  Leftovers.  Yum.
